This book highlights the consumption patterns of meat in rural and peri-urban areas of Kenya. It goes ahead to compute elasticity estimates of different meat types in kenya using the Almost Ideal Demand System (AIDS). The book will help readers to gain insights into computing elasticity estimates of different food groups at a go (as a system) rather than computing elasticity estimates of each food item independently. The elasticity estimates from the AIDS model are cosistent with consumer theory. The AIDS model have the capability of categorizing goods as either gross substitutes or gross complements. The basic demand restrictions of adding up, homogeneity and symmetry are also easily imposed and tested in this AIDS model. Therefore, the reader will gain information on how to apply the same methodology in analyzing demand systems of other food groups across all sectors of the economy.
